Lumache

A fun and versatile pasta shape, Lumache is designed to perfectly hold sauces thanks to its wide opening and slightly flattened end that traps the sauce inside.

One of the most iconic recipes featuring this pasta was created by the legendary Chef and Philosopher Vittorio Fusari. In 2000, during a pasta workshop at the Salone del Gusto in Turin, he showcased one of his classic dishes: Lumache with fresh salami ragout.
